Chilli Sausage Casserole
Serves six (or 3.5 Gang members).
Ingredients
- Tin red kidney beans, drained and rinsed
- 450g sausagemeat
- Tsp each of rosemary, sage, thyme
- Tsp smoked paprika
- 1 tbsp sunflower oil
- 450g green cabbage, chopped
- 1 large onion, sliced
- 1 (or more) green chilli, chopped
- Clove of garlic, finely chopped
- 150ml red wine
- Tin chopped tomatoes
Method

Place sausagemeat in a bowl and work in the herbs and paprika.
With well-floured hands, roll the mixture into 16 balls. Heat oil
in a frying pan and fry the sausage balls until lightly browned,
then drain well on absorbent kitchen paper.

In a large casserole pan, layer up the cabbage, onions, beans and
sausage balls. Blend the chilli, flour and garlic into the pan
residue, adding more oil if necessary and cook for one minute.
Stir in the wine and chopped tomatoes and bring to the boil. Pour
over the ingredients in the casserole.

Cover and cook in the oven at 180C/mark 4 for about an hour, until
tender.
