Chorizo, Vegetable and Pasta Bake
Serves four.
Ingredients
- 2 tbs olive oil
- One large chorizo sausage, sliced
- Tin of chopped tomatoes
- Clove garlic (finely chopped)
- Onion (finely chopped)
- Aubergine or 250g mushrooms (or both)
- 2 Romano peppers (deseeded and sliced)
- 250g mozzarella, roughly chopped
- 350g pasta (e.g. penne)
- 25g basil, shredded
- 2 tsps smoked paprika
Method

Preheat the oven to 200 degrees centigrade, gas mark 6. Heat the
oil in a medium frying pan and add half the shredded basil. Add
onion and garlic and cook for 5-10 minutes. Add
aubergine/mushrooms, peppers and cook for a further 5-10 minutes.
Add chopped tomatoes, smoked paprika and simmer for 5 minutes.

Meanwhile cook pasta in boiling water.

Combine drained pasta and vegtable sauce in an ovenproof
dish. Scatter chorizo, basil and mozzarella on the pasta, pushing
down into the mixture. Place in the oven and cook for 15-20
minutes or until top is golden.

Serve with green salad.
