Sticky Gingerbread
Serves 12 (or should that be 1 or 2?)
Ingredients
- 6oz butter
- 5oz dark brown sugar
- 8oz black treacle
- 2 eggs, beaten
- 9oz self raising flour
- 1 dessertspoon ground ginger
- half a teaspoon bicarb of soda
- 1 teasp ground cinnamon
- quarter teasp ground cloves
- half teasp ground nutmeg
- 4 tablespoons Guinness
Method
Preheat oven to Gas mark 4; I use a 10 inch square dish, buttered
- Melt butter; mix in sugar and treacle off the heat.Add beaten eggs.
- Sift all dry ingredients, then beat into treacle mixture
- Mix Guinness with 4 tablespoons hot water, bring to boil and
stir into mixture
- Pour into dish/tin
- Drink remaining Guinness
- Bake 45 mins - test with skewer
- Cool in tin then cut into squares
