Lentejas Con Chorizo
Serves four.
Ingredients
- Half (Waitrose) packet of green lentils
- Four Chorizo sausages
- 6 medium size waxy potatoes, peeled and cut into quarters
- Clove garlic (finely chopped)
- Red Onion (finely chopped)
- Chopped tomatoes (tinned)
- Red Pepper (finely chopped)
- Bayleaf
- 2 tsps smoked paprika
Method

Put lentils in pan and add sufficient cold water on top to
cover 1 inch above lentils. Just before the pan comes to the
boil, chuck water away. Put in fresh water (same amount). Put on
to low heat. Add chorizo chopped into bite size. Add potatoes.

In separate pan, make soffrito: fry garlic, onion, chopped
tomatoes, bayleaf and red pepper in olive oil. Add two teaspoons
of smoked paprika.

When lentils/potatoes are nearly cooked, add soffrito. Boil
for a couple of minutes.

Serve with bread and green salad.
