Vin Santo Trifle
Serves eight (or four Gang members).
Ingredients
- 250g Italian biscotti
- 100ml vin santo (hmm, maybe double that)
- 8 ripe figs, quatered lengthways
- 1 can pitted cherries, about 425g
- 500ml double cream
- 500g mascarpone cheese
- 75g unrefined caster sugar
- 50g white chocolate
- 50g flaked almonds
Method

Put the biscotti in a large serving bowl, preferably glass. Pour
over the vin santo and arrange the figs and cherries on top.

Put the cream into a bowl and whip lightly until soft peaks form.
Add the mascarpone and sugar and continue whisking until stiff.
Spoon the cream and mascarpone mixture over the fruit, then
sprinkle with almonds.

Using a vegtable peeler (or an Italian truffle slicer if he hasn't
taken the day off) make curls with the white chocolate and
sprinkle over the trifle. Chill until needed.
